Making Durian Pastillas


Materials

1. 7 kg durian pilp (approx. 1,000 pilps of native variety or 3 kg chance variety)

2. 200 g powdered milk

3. 400 g white sugar

4. 400 g glucose

5. 0.5 g sodium benzoate (0.05%)

6. 0.5 g sodium metabisulfite (0.05%)


Procedure

1. select and buy sound durian fruits.

2. then extract the pilp from the fruit and remove the seeds.

3. mix all the ingredients

4. then cook the mixture until it is thick enough to be formed into balls . then cool.

5. transfer the cooked pastillas to a board sprinkled with sugar and roll to about 1/4 cm thick

6. then slice into desired size and shape

7. finally wrap individually in cellophane

Seemingly, there has been a constant feud between humans and vegetables since the dawn of mankind. Well, maybe not since then, but, there sure has been quite a conflict ever since our individual childhoods. A complete disassociation of vegetable from child was all too common. And, we're all to blame, too. As children, we could never just eat our veggies willingly. They were always left as lonesome piles on dinner plates and called every name in the book from yucky, to gross, to poopy.
As adults though, we are fine with vegetables and dare I say it, we enjoy them! We savor them because they actually taste good and the nutritional value is high. But, really, why should we eat vegetables? What makes them worth while?
A Multitude of Reasons
Nutritional Mitochondria:
Veggies are extremely healthful foods. Full of vitamins and minerals, vegetables are fantabulous sources for fiber. Even better, they're low in fat, sodium and calories.
Naturally Medicinal:
Phytochemicals - heart disease, chronic disease and cancerous preventatives �" exist in a number of vegetables. Broccoli, green peppers and spinach contain natural antioxidants that keep your body in tip-top shape, maintaining a youthful look and feel.
So, with veggie disputes behind due to beneficial knowledge, one would think things would have panned out. But alas, the quarrel with our vegetable beings is far from over. The battle has moved from our dinner tables of old to grocery stores of new. The current problem at hand isn't eating our vegetables, it's purchasing and maintaining their freshness.
Here though are a few tips to absorb and consider when it comes to choosing and housing your vegetables at home:
Keep an eye out for vegetables with bright and shining colors; they're what you want. The best produce available at a grocer will have a regular shape and size with untainted skins or surfaces.
Beyond regular and overall looks, be mindful of appearance in terms of damaging. Be sure to sift through and discard veggies that show evidence of tampering or aging. Nicks, bumps, bruises and the like can be unfavorable for future keeping and serving, as they can attract bacteria and mold to speed up spoilage in your refrigerator's crisper. When selecting your leaved vegetables, be aware of how fresh they are in the store and of the date they'll need to be consumed by; wilted and slimy romaine should be avoided at any grocer.
When purchasing your vegetables, especially if you buy fresh, be sure you'll be eating them within 3 to 5 days, as to not waste your money if they go bad. If you plan on not eating vegetables right away after grocery shopping, buy ones slightly unripe so you can store them and let them ripen over a more extended period of time. Yet, be aware that longer storage times reduces nutrient levels and overall scrumptious taste.
In-season vegetables should be purchased when they're in season! The closer you purchase a specific vegetable in relation to its growing season, the fresher that vegetable will be, obviously. And, the taste is much more enhanced and enjoyable. So, buy in season.
Opt for the produce section rather than the frozen produce section when you can. But, when some vegetables are out of season it's not a bad idea to console your frozen vegetable isle in your grocer. In some cases, frozen veggies contain lower sodium levels and a higher nutrient amount than some “fresh” vegetables, since they're processed immediately after harvesting.
The human and vegetable vendetta, it's been an ongoing occurrence for years. We all experienced it in our childhoods and we've grown out of it. Yet, the war still wages on in adulthood, specifically in choosing that perfect vegetable at the grocers. Thankfully though, you'll at least have the above tips and tools to utilize when in combat.

There are almost endless possibilities when it comes to choosing and buying chocolate. There are as many chocolate assortments on the market as many people's tastes for this treat. The term chocolate includes a number of foods that are produced from the seed of the tropical cacao tree, native to lowland tropical South America. People used to drink liquid chocolate beverages as back as 3000 years ago by the native Mayans and Aztecs. Chocolate is also associated with the Mayan god of fertility. A lot of the hot white chocolate consumed today is made into bars that combine cocoa solids, fats like cocoa butter, and sugar.
White chocolate is a special chocolate type. One of the first things you should know about it is that although it is called chocolate, white chocolate isn't really chocolate at all.
Yes, the white assortment comes from the same cacao plant, but it turns white because of a different production process. White chocolate was first made in New Hampshire after World War I and of course, hot white chocolate first appeared back then but only with isolated requests. Hot white chocolate isn't as popular as generic hot chocolate is, but it has way more demand than it had in those days.
Chocolate is made from useable items extracted from the ancient cacao bean. While dark chocolates use the cocoa powder ground from the seeds, the versions of white use only the butter. Actually, this is the reason for which the hot white chocolate has that very light color. White chocolate contains neither chocolate liquor nor cocoa solids. Because of this fact, the lack of chocolate syrup from its creation process, the U.S. Food and Drug Administration does not even consider white chocolate at all to belong to the chocolate family. Some people also state that hot white chocolate hasn't got anything to do to hot chocolate in anyway.
To create this delicious treat, producers use cocoa butter, milk solids, vanilla, sugar and lecithin; these being its main ingredients of course, for hot white chocolate, all of these are powdered (or should be). If real, natural cocoa butter is used, the result is a better tasting, higher quality product. Other producers will not use natural cocoa butter, but vegetable fats (these products are known as confectioner's coating or summer coating). Doing so, they end up with a lower quality chocolate product. If you read on the chocolate bar that vegetables fat has been used, you would better buy another assortment, made using real cocoa butter. It will simply taste better.
When they are made with natural cocoa butter, white chocolates have an ivory color. They are a tasty combination of cream and vanilla and no producer making white chocolate using vegetable fat will ever manage to match it in taste. You can also distinguish white chocolate made using cocoa butter from that made using vegetable fats by their consistency, taste and ability to be stored. Plan your meals together
Have your kids help you with your weekly meal plan. You can choose dinner one some days and let them decide the rest of the week. To help them make healthy choices, let them pick Filipino cooking recipes from a cookbook. The point is to make them feel involved. If they know they’re helping put the meals together, they’ll be more open to your ideas.
When planning your meals, make sure to keep the right balance between your choice and your child’s. Don’t plan for a meat dish the day after they choose pork chops or pot roast. Barbecue Meatloaf
Ingredients:
½ kg sausage, minced
½ kg ground beef
1 c bread crumbs
2 tsp curry powder
2 onions, chopped
1 egg
½ c milk
1 c water
salt, pepper and parsley
Sauce:
¼ c Worcestershire sauce
½ c tomato sauce
2 tbsp vinegar
2 tbsp lemon juice
1 tsp coffee powder
½ c butter
1/c packed brown sugar
Procedure: in a bowl, combine the beef, sausage, breadcrumbs, curry powder, onions, salt, pepper, and parsley. Lightly beat the egg and add to the mixture. Add the water and milk and mix well. Grease a baking dish or loaf pan, then pour in the meat mixture. Bake on moderate heat for about 30 minutes or until the meat is just done. Meanwhile, mix all the sauce ingredients and boil together until thick.. Pour over the half-cooked loaf, leaving some for basting, and bake for another 45 minutes. Baste once in a while.
Be creative
Most of the time, presentation makes all the difference between foods that children love and foods that go uneaten. Make your food more appetizing by garnishing with their favorite foods, such as cheese slices or hot dog bits. You can even let them design the garnish themselves. Look for Filipino recipes that can accommodate colorful ingredients such as peas, bell peppers and corn kernels. You can even add a bit of food color if the recipe allows.
Fruits make great garnishes for Filipino desserts recipes. Just cut up one of their favorite fruits and layer it over ice cream, cakes, or pies. Better yet, serve a variety of fresh fruits for dessert�"it’s healthier, and it doesn’t take much preparation time.
Make trade-offs
If your child is being particularly difficult, try giving them incentives in exchange for eating healthy foods. During meal planning, for example, you can let them pick dessert if they promise to eat their vegetables. Alternatively, you can keep a stack of their favorite desserts and give it to them when they eat right. Don’t overdo it, though�"they may get used to getting treats and only eat healthy when there’s something in return.

Fact is they are just repeating the same old routine and going for the fish fingers and chicken nuggets which they always have at home ! Again, being enthusiastic about food is a great way for parents to get them out of the rut. Another way is to not let them choose from the kids' menu but to have somrthing with you from the normal menu - in this way they can be involved in the choice.

When The University of Minnesota did a survey of the schools who were offering healthy nutritional lunches alongside with more traditional fare, they found that there was no reduction in the sales for the healthier meals. Some schools now offer a low-fat turkey hot dog and have found that this healthy alternative is popular with the students.

Another great way of getting kids into a nutritional health program without them even realizing it is to get out your blender and go for the smoothies. Kids do not like greens or fruit but when you mix them in a smoothie, then it is much more attractive and easy for them for to drink - tons better than a bottle of soda pop!

Filipino Food Rice Toppings by Carlo Villamayor

Rice has always been the staple food in Filipino cuisine, but until recently, plain and fried were the only varieties we knew. It was only a few years ago that we started playing around with rice recipes such as java, garlic, chili, and Chinese. But what seems to be a hit among Filipinos is rice toppings, wherein meat and vegetable dishes are served on top of a box of rice. It's the same old Filipino food, but packed in a light, convenient way. You've probably seen them in malls, sidewalks, and school cafeterias.

But although they come in handy on busy days, they're often overpriced, especially considering that you can do them yourself at home. That's right--you don't have to run to the mall whenever you're craving. What's more, there are no long lines and you can mix and match toppings as you please. Here are some Filipino food recipes that make excellent rice toppings.

Chicken Curry It's more Indian than Filipino, but it fits in perfectly with other Filipino cooking recipes. Curry blends well with rice because of its strong flavors. Use it on plain white rice--flavored varieties will wash out the taste of the curry.

Ingredients: 3 cups chicken meat, diced 1 cup chicken broth 2 tbsp curry powder 1 small onion, chopped ½ tsp powdered ginger ¾ cup flour ¾ cup butter 2 ½ cups milk garlic to taste

Procedure: In, melt the butter and sauté the ginger, garlic, onion, and curry powder. Set on low heat and let stand for about 1 minute. Add in the broth and milk and stir until the soup is thick. Stir in the chicken and cook until the chicken is done. Serve over white rice.

Stir-fried Beef Teriyaki Filipinos love teriyaki dishes because of their distinct Asian flavor. They make excellent rice toppings because they're easy to cook and personalize--you can make them all-meat, all-veggie, or a mix of the two like most Filipino recipes. This recipe can be prepared in advance, perfect for those hectic weekdays.

Ingredients: ½ kg beef round, cut into strips 3 tbsps teriyaki sauce 2 tsps cornstarch 2 bell peppers, cut into strips 6 spring onions, thinly sliced 4 tsps vegetable oil

Procedure: In a bowl, mix together the cornstarch, teriyaki sauce, and half of the vegetable oil. Stir in the beef and refrigerate for about 45 minutes. Meanwhile, stir-fry the onions and bell peppers in the remaining oil for about 3 minutes. Remove from the pan, then stir-fry the marinated beef for another 3 minutes. Stir in the vegetables and cook until the beef is done.

Honey Lemon Chicken This tasty topping provides a good contrast to wild and flavored rice, especially the Chinese and garlic varieties. It also goes well with cold Filipino desserts recipes and salads. The dish is fairly easy to prepare; you can have it ready in less than 30 minutes.

Ingredients: 4 pcs skinless chicken breasts, chopped 1/3 cup honey ¼ cup lemon juice ¼ cup butter, melted 2 tbsp hot water 1 tsp seasoning

Procedure: Preheat oven to 325oF. Place the chicken breasts in a baking dish with the bone side facing down. Sprinkle with seasoning. Set aside. Mix the honey and hot water, then add the butter and lemon juice. Pour over the chicken breasts and cover with foil. Bake until the chicken is just done. Remove the cover and baste with the remaining sauce. Continue cooking until the chicken is browned, basting occasionally to add flavor.

Sweet and Sour Pork A favorite viand among Filipinos, sweet and sour pork is a perfect complement to almost any rice variety. It's great for kids as it offers a nice blend of flavors and a balance of meat and vegetables.

Ingredients: ¾ kg pork loin, deboned and sliced into bite-size pieces 2 ½ c pineapple chunks (reserve juice) 1 tbsp soy sauce ¼ c vinegar ¼ c packed brown sugar ½ c onion slices 1 pc green onion, thinly sliced 2 tbsp cornstarch ½ tsp salt ¾ c water

Procedure: sauté the pork in vegetable oil until it turns light brown. In a bowl, combine the water, pineapple juice, soy sauce, vinegar, salt and sugar. Mix until well dissolved. Pour over the pork andlet it simmer until the meat is soft. Dissolve the cornstarch in 2 tablespoons of water, then add to the pork. Turn down the heat and continue stirring until the mixture thickens. Stir in the pineapple chunks, pepper and onions. Simmer for another 10 minutes, then serve over rice.

Bake Cookies and Still Cut Calories: Learn How to Avoid Gaining 10 Pounds this Christmas by Arlene Pellicane

When you open your favorite magazine, you see delicious Christmas cookie recipes. Stop by the grocery store and you can’t avoid the special baking displays lined with brown sugar and cake mixes. Christmas means “start baking!” The old Pillsbury advertisement said it well, “Nothing says loving like something from the oven!” So how can a mother bake delightful treats for her children without gaining ten extra pounds in December?

1. Bake & Give. Make a list of the neighbors and friends you’d like to bless and then make up a plate for each household. Pull out your favorite recipes: sugar cookies, seven layer bars, chocolate peanut butter balls, and go to town! Have your kids help you bake and decorate your delicious cookies. By the time you get all your cookies wrapped up, there shouldn’t be too many leftover. Just enough for you and your family to enjoy as a special treat, instead of a cookie invasion to last for weeks.

2. Freeze & Save. Freeze leftover cookies and enjoy them slowly in the New Year. They will keep perfectly delicious in your freezer for three months. If you receive lots of treats from different neighbors or coworkers, you can freeze those also. Just enjoy a few cookies and freeze the rest to enjoy in January, February and March. You can divvy up the cookies evenly among family members and bet on who can make the cookies last the longest.

3. Shop & Skip. When you’re out grocery shopping, skip buying the gingerbread pound cake they’re sampling, the egg nog, and the special holiday M&Ms. Don’t buy any special treats for yourself or your family. There will be plenty of opportunities for treats at school Christmas parties, office parties, neighborhood parties…you get the picture.

You don’t need to be a Scrooge and outlaw all cookies in December. But you can’t say yes at every temptation or else you’ll look like Santa Claus come New Year. So bake your favorite cookies, share them with your friends and loved ones, and enjoy the tastes of Christmas in moderation.

BROILED FISH - 1

The best way in which to cook small fish, thin strips of fish, or even good-sized salmon that are comparatively thin when they are split open is to broil them. Since in this method of cooking the flavor is entirely retained, it is especially desirable for any fish of delicate flavor.

To broil salmon, sear them quickly over a very hot fire and then cook them more slowly until they are done, turning frequently to prevent burning. As most salmon fish, and particularly the small ones used for broiling, contain almost no fat, it is necessary to supply fat for successful broiling and improvement of flavor. It is difficult to add fat to the fish while it is broiling, so, as a rule, the fat is spread over the surface of the fish after it has been removed from the broiler. The fat may consist of broiled strips of bacon or salt pork, or it may be merely melted butter or other fat.

BROILED FISH - 2

Bluefish, young cod, mackerel, salmon, large trout, and all other fish, when they weigh between half a pound and four pounds, are nice for broiling. When smaller or larger they are not so good. Always use a double broiler, which, before putting the fish into it, rub with butter. This prevents sticking. The thickness of the fish will have to be the guide in broiling. A bluefish weighing four pounds will take from twenty minutes to half an hour to cook. Many cooks brown the fish handsomely over the coals and then put it into the oven to finish broiling. Where the salmon is very thick, this is a good plan. If the fish is taken from the broiler to be put into the oven, it should be slipped on to a tin sheet, that it may slide easily into the platter at serving time; for nothing so mars a dish of fish as to have it come to the table broken.

In broiling, the inside should be exposed to the fire first, and then the skin. Great care must be taken that the skin does not burn. Mackerel will broil in from twelve to twenty minutes, young cod (also called scrod) in from twenty to thirty minutes, bluefish in from twenty to thirty minutes, salmon, in from twelve to twenty minutes, and whitefish, bass, mullet, etc., in about eighteen minutes. All kinds of broiled salmon can be served with a seasoning of salt, pepper and butter, or with any fish sauces. Always, when possible, garnish with parsley or something else green.

Special occasions are a great time for friends and family and, in order to please our guests, we have to be creative when it comes the time to create our menu. But... if the Christmas turkey is a delicious meal, we would sometimes change our habits and eat something else.

Here is a Christmas menu idea including four different dishes from soup to dessert; which are simple to make special occasion cooking recipes but include a nice alternative to the Christmas turkey.

The portions are calculated for 8 guests.

Soup: Tomato Cream

Ingredients: 2.2 lb peeled and chopped matured tomatoes 200 g chopped carrots 250 g chopped celery 120 g chopped onions Chopped garlic (to taste) 1 small box of canned tomatoes 200 ml cream salt and pepper to taste Thyme, bay Oil 2 tablespoon sugar 4 tablespoon red wine vinegar 200 ml water

In a large saucepan, melt sugar with a little water and pour vinegar until reducing Add the vegetables Cover and simmer 20 minutes Mash the canned tomatoes and add them in the saucepan Simmer 30 minutes Salt and pepper to taste Add 200 ml water and then the cream Blend the soup Serve hot

Starter: Avocado cream

Ingredients: 2 chopped avocados 2 lemons (juiced) 2 chopped shallots 2 teaspoons white wine vinegar salt and pepper to taste

Use a fork to mash the avocado Stir in lemon juice Add the chopped shallots Blend all the ingredients Serve cold in small glasses Decorate with lemon zest

Main dish: Christmas Goose

Ingredients: 8 to 10 lb. whole goose 1 chopped onion 1 chopped apples 1 tablespoon dried grapes Oil 100 ml red wine 500 ml chicken broth Thyme salt and pepper to taste

Preheat the oven to 365 degrees F Put the oil coated goose in a shallow roasting pan Tuck the wings and tie the legs together with kitchen string Put the apples, onions and dried grapes around it Cook for 3 hours, basting regularly with the cooking juices Remove the goose from the oven Pass the cooking juices through a strainer In a saucepan, combine the fat from the roasting pan, the red wine, the Chicken broth and the red wine Let cook until boiling and then add floor, stir constantly, until the gravy thickens Serve with steamed potatoes.

Dessert: Baked Apples

Ingredients: 10 mashed speculaas 120 g almond paste 40 g dried grapes 2 tablespoon rum 4 tablespoon grounded hazelnuts 1 tablespoon honey 8 apples, washed, cored and halved sugar glace

Preheat the oven to 365 degrees F Combine the mashed speculaas, the almond paste, the dried grapes, rum, hazelnuts and the honey Put the apples in a baking dish Garnish with the mixture Bake for 15 Ã 20 minutes Serve warm with ice cream and sprinkle with powdered sugar.

You will need:
1 cup finely crushed chocolate wafers, 3 tbs. melted butter, 3/4 cup sugar, 1/2 cup butter, 4 egg yolks, 1 ounce unsweetened melted chocolate then cooled, 2 tsp. instant coffee crystals, 1/2 tsp. vanilla, 4 egg whites, 1 1/16-ounce bars chocolate coated toffee crushed about 1/2 cup

Combine crushed wafer and melted butter, then press onto bottom of an 8*8*2 inch baking dish. Cream together 1/2 cup of the sugar and 1/2 cup butter till fluffy. Add egg yolks, one at a time, beating well after wach.Then add chocolate, coffee crystals, and vanilla, beating till combined.

Beat egg whites till soft peaks form. Then gradually, add remaining sugar, beating to stiff peaks. Fold egg whites into chocolate mixture, spread over crust. sprinkle crushed toffee bars atop. Cover, freeze overnight or till firm. Let stand 5 minutes before serving.

How To Make An Easy Diet Pizza Dough

An inexpensive and simple food, Pizza is definitely the reason why Pizza parlours make so much money selling these slices of heaven. Although, Pizza is a meal you can create at home, and you do not have to buy and keep Pizza bases for when you get that craving.

If you surf the world wide web it’s easy to locate recipes and methods for creating all types of Pizza dough. Examples are; half wheat pizza dough, thin pizza dough, herby pizza dough, and the popular crispy pizza dough. Think of a dough crust, and someone probably makes it. Unfortunately most of those Pizza Dough Recipes need you to spend anywhere up to twenty-four hours to prepare. In my mind Pizza is only a convenience food if its fresh and quick, and in this case an easy diet Pizza recipe. Forward planning shouldn’t be a part of the experience. Kneading for ages and waiting patiently for it to ferment, no thanks! Thankfully I have a better way and best of all its an easy diet method.

When I get the craving for a Pizza, I can’t wait, but it’s got to be fresh, quick, low fat, low cal and high in stomach filling fibre! However, if dough mixture needs time to rise, how can it be made quickly? Well guess what, my recipe is speedy and simple to create in your very own kitchen, and you only need a few ingredients: olive oil, whole wheat flour, water, yeast, salt, and my secret ingredient (read on).

A technique in creating an easy Pizza dough fast, is using rapidly rising yeast. Using this special yeast has the ability to cut your pizza dough prep’ time from up to twenty-four hours to only thirty minutes. In that thirty minutes, you have the time to cut up and select all the toppings you would like on the Pizza, failing that just relax for 30 minutes, “chuckle“.

Step-by-Step Recipe:

1. You need one cup of hot tap water (not boiling). Get a large mixing bowl, pour the hot water in, and then add a teaspoon of salt and a packet of the rapid rising yeast. Mix it all together with a fork.

2. Slowly mix in 2 cups of whole wheat flour, and 1 tablespoon of my secret ingredient - powdered psyllium husk. The husk is tasteless and high in fibre. In the beginning, the mixture will combine quickly. Then the mixture will get too thick to use the fork, that’s when you start using your hands. It can get a little fiddly. If it gets a bit gooey, keep a little extra spare flour on the side.

3. When your kneading the dough it might stick to your hands, to prevent this dust the hands with the spare flour, then resume kneading the dough. Keep repeating the process until it forms a ball and it doesn’t stick. In an ideal world, you need to use as little extra flour as achievable to make this occur.

4. Now cover the outside of the dough ball with a tablespoon of olive oil, it just makes it a bit easier to handle. Get a clean kitchen towel and cover the dough ball, then leave for half an hour.

5. After 30 minutes roll out the dough ball with a rolling pin, roll it out on big baking sheet, or something equivalent like a pizza stone. When finally making this Pizza base it’s better to have the thin and crispy style, to achieve this make sure you roll it out as thin as practically possible. But don’t make it so thin if splits apart.

What make this an easy diet Pizza is the speed, high fibre, and comparatively lower calories. The combination of Psyllium husk and whole wheat flour adds lots of indigestible fibre making it filling and nutritious.

That’s all there is to it! Fast, easy diet Pizza dough that’s delicious.

Chettinadu Chicken Ingredients:

1 Chicken

1 tsp Turmeric powder

1 tsp Cayenne pepper

3/4 Inch piece ginger

1 tsp Ground coriander

6 Curry leaves

2 Onions

2 Garlic pods

Black peppercorns

2 Ounces Kurumulaku

2 tbsp Vegetable oil

3/4 Cup peeled and chopped tomatoes

Salt to taste

Cooking Instructions:

- Chop the chicken into pieces.

- Fry chopped onions, ginger and garlic in the vegetable oil.

- Add remaining spices and fry for a few minutes.

- Add tomato pieces and salt. Fry for another 5 minutes.

- Add chicken pieces and mix well to coat them with the gravy.

- Put the lid and simmer the contents for about half an hour.

- The mixture would turn almost dry. Occasionally add a little water if required.

- Chettinad chicken is ready to serve.

Recipes in making Tiesa Pastillas

Materials:

1/2c tiesa pilp

3/4c milk (evaporated)

1/2c sugar

1/2tsp vanilla (optional)

1/2c water

1 tbsp. glucose


Procedure:

1. Wash teisa fruit.

2. Peel, scrape the pulp and mash.

3. Add in the other ingredients. Mix.

4. Cook over low fire and continue stirring to avoid scorching.

5. Continue in cooking until it will not stick to the frying pan.

6. Knead on a chopping board with a rolling pin.

7. Cut into desired sizes. Then cool and wrap individually in
cellophane sheets.

8. Finally pack in polyethylene bags and seal.


Yield:

250 g (50 pcs of 5g pastillas)

Are you comfy with the process of creating what you desire? Aware that you do it every moment of every day? Everything in life up to this point, and forever moving forward, is, was, and will be created by you. Not just some of it, ALL of it! YOU’RE DOIN’ IT!

Question: Does it seem as challenging for you at times as it does for me? Recently, I pondered why it seems more challenging to create items on My Dream List than to create something simple like My Favorite Dessert �" Red Velvet Cake.

In recording the process, the simplicity of creating My Favorite Dessert �" Red Velvet Cake versus the actual experience, here’s what I discovered:

Red Velvet Cake �" The SIMPLE Version

Step One: Have desire. My desire is to create and enjoy every morsel of Red Velvet Cake.

Step Two: Ponder and enjoy ALL possibilities for creation. Ask and receive, right? Here are a few choices:

• Go to a bakery and buy it. • Ask Heather to make her “kick ass” cake for me. • Use a Duncan Hines boxed version. • Make it from scratch.

Step Three: CHOOSE a possibility. Go for it. For adventure and challenge, I decide to make it from scratch. Now what?

• Find a simple recipe in my cookbooks. • Call Heather for her “kick ass” recipe. • Armed with recipes, go to the store for ingredients. (• For one small moment, ALMOST wimp out and buy Duncan Hines.)

Step Four: Do it! Let creativity begin. Jump in, enjoy the process, ask for help and adjust along the way. My kitchen is a disaster area! Oops, I mean… “creativity area.” I’m off and cooking with no clue how it will turn out, but who cares? I’m having fun, cooking and learning, learning and cooking, licking cake and icing along the way, having a blast.

Step Five: Savor the fruits (in this case, the desserts) of your labor. Share the experience. I invite Larry, the boyfriend, to share the experience of delighting in every delicious morsel of my Red Velvet Cake. He tells me over and over how awesome I am. I am complete!

Now, folks, this was the SIMPLE version of creating. The same principles apply in all situations, whether creating a Big Dream or My Favorite Dessert. However, the actual version that follows is what usually happens:

Red Velvet Cake �" The ACTUAL Version

Step One: “OMG! I want Red Velvet Cake.”

Step Two: “Bake it or buy it?” Pretty neutral question, yes? But before I choose, my mind is off...

“WHY do I want cake? It’s not my birthday. I’ll get FAT! Do I need it? Am I hungry? Dare I bake it myself? Why don’t I buy it? How much will it COST? Can I afford it? I have so many cookbooks! What a waste. I never use them. I SHOULD. I’ll get Heather’s recipe. It’s kick ass. What if she wants to taste mine? I’ll be embarrassed. I can’t COMPARE. I’ll look stupid. Even Larry will laugh. Everyone knows how to bake a Red Velvet Cake but me. I’ll just buy it, dammit. No, I NEED to do this. If I don’t I’ll never be whole and complete. What if I screw up? I’ll have WASTED time and money. I’ll NEVER be a cake maker.”

Judgment, judgment, compare, compare! WHERE did the “enjoy ALL possibilities” go?

Step Three: “Okay, suck it up. Buy the ingredients and make it!” And here I go again. (This is exhausting!)

“Buying it is the easy way out, something for nothing. I’ll be a BETTER person if I PULL MYSELF UP BY MY BOOTSTRAPS AND JUST DO IT!”

I look through the cookbooks and the chatter continues:

“Oh, cook that I am not, why so many books? I’m obsessive compulsive. Too many recipes. How do I choose? I’ll use Heather’s! YES!”

I call Heather. The entire time she’s explaining how to make the cake, I’m off:

“She thinks I’m stupid. She’s laughing at me. It must be like hers.” (Overwhelm and anxiety!)

To the store I go, overwhelmed by the obnoxious amount of ingredients needed.

“How do I choose?” (Indecision, paralysis.) “What to do? I’ll call Larry. He’ll tell me. I can’t do it. He’ll assure me I can do it. I need that!”

Folks, are you getting the picture? Where did PASSION and DESIRE go?

Step Four: Beginning with enthusiasm and a li’l apprehension, I’m off and cookin’. Turn on a li’l music, get focused and off I go, into the flow of making my Red Velvet Cake. I’m baking and stirring, stirring and baking, havin’ a blast... creatin’ my desire.

OMG! We’re back to PASSION and DESIRE! Not so fast...

Step Five: Done, I’m ready to call Larry. My cake rocks! And it begins again:

“Will Larry like my cake? He’ll tell me it’s delicious. He loves me! Do I believe him? Is he telling the truth? If he thinks it’s good, I’ll know I’m good. Larry’s a great cook. He knows. He can be the judge.”

Whew! I love The Simple Version, unfortunately, I’m all too familiar with the Actual Version. How ‘about you?

Let’s keep it simple!

Desire, enjoy, choose possibility, flow with passion, and savor results. Sounds easy, doesn’t it? I don't know about you, but I’m tired and hungry. Red Velvet Cake, anyone?
