Recipes in Making Durian Pastillas

Materials
7 kg durian pilp (approx. 1000 pulps of native variety/ 3kg chance variety)
200 g powdered milk
400 g sugar(white)
400 g glucose
0.5 g sodium benzoate(0.05%)
0.5 g sodium metabisulfite((0.05%)

Procedure
1. buy and select sound durian fruits
2. extract the pulp from the fruit and remove seeds
3. mix all the ingredients
4. cook the mixture untill it is thick enough to be formed into balls ,cool
5. transfer the cooked pastillas to a board then sprinkled with sugar and roll to about 1/4 cm thick
6. then slice to desired size
7. finally wrap individually in cellophane

Yield
16 pack (500 g pack) for native variety
18 packs (50 g pack for chance variety)

Variation
blending of 20% native variety and 80% chance variety.
